    1. Preheat the oven to 375 degrees fahrenheit (190 degrees celsius). Use a paper towel to lightly coat the inside of a casserole dish with 1 tsp of canola oil. Sprinkle the breadcrumbs onto the oiled dish.
    2. Pour the other 1 tsp of oil in a frying pan and heat over medium heat. Add the onion and cook until translucent (about 5 mins).
    3. Add the spinach to the onion and cook out the remaining moisture from the spinach (about 3-5 minutes more). Let the pan cool while you prepare the next step.
    4. In a bowl, mix together the eggs, egg white, shredded cheese, feta cheese, salt, and pepper. Pour this mixture into the cooled pan with the spinach and onion, mix well.
    5. Pour the mixture into the casserole dish, on top of the breadcrumbs, and bake in the oven until done, 30-45 minutes.
