        Instructions
        1. Cut the filet mignon into thin cutlets about 1/4 inch thick.
        2. Mix the flour, salt, and pepper together in one bowl. Whisk the egg into a second bowl. Pour the breadcrumbs in a third bowl.
        3. Dredge each cutlet in the flour, then the egg, then the breadcrumbs, in that order.
        4. Put 1 tbsp of olive oil in a frying pan and get hot. Put the cutlets in the hot oil and cook until brown on one side.
        5. Flip cutlets and pour remaining olive oil in the pan, cook until the cutlets are nicely browned, and then put on a plate with a paper napkin to drain.
