    1. Preheat oven to 325 Fahrenheit, move rack down so a large pot will fit in the middle.
    2. Season the beef with the salt and pepper. Heat 1 tablespoon of olive oil in a heavy pot. Brown the meat on all sides, in 4 batches, adding a tablespoon of olive oil to each batch. Transfer meat to a large bowl (to catch all the tasty juices that will leak out).
    3. Add the onions and garlic to the pot. Use the vinegar and Worcestershire sauce to deglaze the bottom of the pot and cook for a few minutes.
    4. Add the meat and meat juice, tomato paste and flour to the pot, stir well until all of the flour dissolved. Add the wine, beef broth, thyme, bay leaf, and sugar, stirring to deglaze the pot once more. Bring to a boil.
    5. Carefully transfer the hot pot to the preheated oven and cook for 1 hour 40 minutes.
    6. Add the potato, carrot, and celery to the pot, stir and cook for 1 hour and 20 minutes more.
    7. At this point the stew is ready, you can eat it now, OR, if you have patience, fridge it. It will be even more amazing the next day (plus you can scrape off the hardened fat once it's cold, making it a little healthier)
