    1. Place the eggs in a small pan, cover with water and bring to a boil.
    2. As soon as the water is boiling turn off the heat (take the pan off the burner if it's an electric stove). Cover the pan and let cook for 12 minutes.
    3. After 12 minutes put the eggs in a bath of ice water.
    4. Mash the avocado, mixing in the chili powder, salt, pepper, and lemon juice.
    5. Peel the eggs and add to the avocado mix, use a knife to roughly chop the eggs into the mixture. Enjoy.
    Recipe Notes

    This egg salad is delicious in a sandwich with some tomato and lettuce.
    If you make a sandwich, adding a little salt and pepper to the tomato really brings the flavors out.
